I'm sorry I didn't get to post a pumpkin recipe today. It will have to be Pumpkin Thursday this week. Sofia went to her one year check up and got vaccines. Every time she does she gets a fever. She becomes very sad and needy so I don't do much but sit on the couch and cuddle her. Lovely for me and comforting for her. Though I don't want her to feel sick, I love that she stops moving for a bit. In any case we got almost nothing done today. Since the next pumpkin recipe will be some what labor intensive, I wanted to save it for a day when I wasn't needed as much. Sorry for the delay.
To keep your mouth watering in the mean time I present to you, potato pizza. You love this pizza even if you've never had it. You just don't know it yet. Not one person I have ever served this two in the past 7 years has not fallen head or heals for it.
Basic instructions:
1 pizza dough stretched thin.
2 potatoes washed and thinly sliced.
1 spring of rosemary chopped up.
salt and pepper to taste.
Put the pizza dough on a large baking sheet drizzle with olive oil. Layer on the potatoes and then sprinkle the rosemary and salt and pepper on top. Give another drizzle of olive oil and bake in a 425 oven for 25 minutes until potatoes are for tender and crust is golden at the edges. Cut up into squares, eat it and fall in love.
Potato pizza sounds fabulous to me!
