Alright, so here it is one sweet pumpkin recipe. This recipe come from Feeding the Whole Family by Cynthia Lair. I really recommend this book, the recipes in it sound so tasty. She also give lots of good info about buying healthy whole ingredients.
I made these cookies for Sofia's birthday party and they went like wild fire. I did not expect that since they are soft and not too sweet. I just love them and I like that Sofia can eat them as well. They are made with spelt and barley flour.
Halloween Cookies(as they are called in the book)
1 cup spelt flour
1 cup of barley flour
1/2 teaspoon of baking soda
1 teaspoon of ground cinnamon
1/2 teaspoon of ground ginger
1/4 teaspoon of nutmeg
1/4 teaspoon of allspice ( I use clove as I don't have allspice believe it or not)
3/4 cup of pumpkin puree
3/4 cup of unrefined cane sugar ( I use radapura or sucanat)
1/4 cup apple butter
6 tablespoons of butter, melted
Preheat oven to 350, combine the flours, baking soda and spices in a big bowl. In another bowl combine the pumpkin, sugar and butters mix well. Combine the wet and dry ingredients. Drop by tablespoons onto a baking sheet and bake for 15 minutes.
Note: because of the melted butter these cookies are soft and not crisp. Melting butter before putting it into a cookie batter is the key to soft cookies. without using yucky Crisco. Also the recipe in the book says you can add yam frosting( yam puree and cream cheese with a little sugar all mixed together). I think it would be good, I just never remember to make it.

ReplyDeleteI learned about the melting butter thing from Alton Brown. I like chewy chocolate chip cookies and his recipe is the best. All the others call for crisco where as his calls for melted butter. albeit it's a lot of melted butter, but it's a huge batch of cookies. I make them every holiday season. Next play-date I'll make some.
