My vegetarian lasagna

Here it is. My vegetarian lasagna recipe. I'm sorry it took ages and ages. It's quite embarrassing, please for give me. I forgot to take a picture this last time I made it, but I will make it again this week and add a picture...
 For 6-8 portions.

Ingredients:
1 box of no boil lasagna sheets (or if you are brave homemade lasagna sheets) 

1 box of mushrooms (I use cremini)
1 head of cauliflower
1 large carrot
2 celery ribs
1 28 oz can of crushed tomatoes
1 1/2 cups of bechamel sauce
1 cup of grated mozzarella

Start by cutting the veggies into large chunks . Then steam them (minus the mushrooms) in a pot of water until fork tender. Remove with a spider or slotted spoon and transfer to a food processor. Blend up until you get a really fine dice. We're trying too make it similar to ground beef. You want a scoop-able spreadable texture but not pureed. You might need to do it in two batches. Put the veggie mixture in a bowl. Then put the chopped up mushrooms in the food processor and blend until really finely diced. Add those to the veggie mixture.

Now make up the bechamel sauce. Melt 4 tablespoons of butter in a sauce pan. When the butter is melted add in 4 tablespoons of flour and stir well to hydrate all the flour. Then add in 3 cups of milk, whisking as you go to avoid lumps of flour. Allow to thicken over medium low heat. It will probably take about 10 -15 minutes. Season with salt, pepper and fresh ground nutmeg.

Now you are ready to assemble. Take your baking dish and pour some of the tomatoes on the bottom so just enough so that the pasta won't stick. Then put a layer of lasagna sheets. Next add in a layer of veggies, then tomatoes then bechamel. Place another layer of pasta and repeat like above. When you are out of pasta sheets or at the top of your dish pour the rest of the bechamel sauce over the whole thing and top with the mozzarella. Cover with tin foil and bake in a 375 degree oven for 40 minutes. Take the foil off and bake another 20 minutes until the top is brown and delicious looking...

Note: You can really mix up the veggies anyway you want. You can also add in a layer of chopped cooked spinach or change out the cauliflower for broccoli. I do it a little different every time according to what veggies I've got in the fridge.
