More pickles


This time I canned some quick vinegar dill pickles. Of course the little old farmer at the market had a load of cucumbers again so I bought what I thought was soo many (in reality it was just under 2 pounds). I made 3 half pint jars of dill spears. These won't be ready for tasting for several weeks. Though I am sure that when they are ready to eat they won't last three weeks.

Now that I have a hang of this canning thing it's becoming really fun. I'm a long way from having a whole pantry full of canned food. I've got to really work on the whole surplus in the garden thing. I do imagine one day of being able to feed my family all it's veggies from the garden and not having to buy produce at the store.

As for the pickle recipe, I used the one from Preserving Food at Home. It's a great book on preserving; you should check it out!
