Yummy! After four weeks of waiting the farm house cheddar I started
here is ready.
So I tasted it today and it is good. At first I only took a peek, not wanting to get too excited in case I did something wrong.
Then this happened.
It's crumbly, mildly sharp. It's a young cheese but will age into something wonderful. I'm already drooling over what to make next. Another cheddar? Fontina? Maybe scamorza? I am a cheese maker and I am happy!

ReplyDeleteYou must be so excited. It looks beautiful! I am hoping to start making cheese as well, I thought I'd start with some soft cheeses like stracchino and mozzarella but I'd love to make cheddar. Yum!

ReplyDeleteI have Cheese Making at Home by Ricki Carrol and now Artisan Cheese Making at Home by her daughter. I used Ricki's book for this particular cheese. I get all my supplies through the New England Cheese Making Supply Company.

ReplyDeleteThe waiting is just crazy. Nothing like yogurt or buttermilk. Then when it doesn't work it's such a bummer!
