Suppli style stuffed peppers
Suppli are little balls of rice with piece of mozzarella in the middle that's been breaded and fried. Needless to say they delicious! So when Daniele suggested I try make dinner version of them by stuffing a bell pepper with suppli rice, I took this idea and ran with it. I started by making a simple risotto (two person portions worth) and adding in a bit of tomato sauce. When that was done I added chunks of mozzarella, chopped spinach and peas. Then I stuffed a pepper I had cut in half like a boat and put some wholewheat bread crumbs on top. Finally I roasted them at 375 until the bread crumbs had browned and the pepper was soft. About 20 minutes. I served it with a side of sauteed zucchini and mushrooms. Yummy! This was Sunday nights dinner by the way.
