Zucchini chocolate chip cookies


By being part of a CSA summer session I am loaded with zucchini and yellow squash. So in order to make good use out of them I decided to try out the zucchini chocolate chip cookie recipe from Barbara Kingsolver's Animal Vegetable Miracle. These are so yummy and moist and delicious. The really the great thing about zucchini is that when you put it into baked goods, it has no real flavor but adds a ton of moisture.


Daniele came home when these were still cooling on the rack and said, "Oh! These have yellow and green things in them that must mean they are delicious!" I think that means he's getting used to having healthy baked goods (or he was being sarcastic).

The only change to the recipe I made was to use whole wheat pastry flour instead of half whole wheat/ half all-purpose.
