Homemade marshmallows

We're going camping this weekend and you can't have a campfire without smore's. I've always wanted make my own marshmallows because we don't do corn syrup around here. So I found a nice recipe using a simple syrup and gelatin.  They were super easy to make and to me about 30 minutes totally. Most of that was down time waiting for the syrup to reduce a bit and then whipping the gelatin and syrup together. You can find the recipe I used here.

 Here they are setting up. The recipe said to put them over night in the freezer but I skipped that as they were good to be eaten about three hours later having sat at room temp.

The the taste and texture of homemade marshmallows is so much fresher and moister. Needless to say we won't be buying marshmallows again ( not that we did very much anyway except for camping).

This time I used organic granulated cane sugar but I think I will use radapura next time.  I've even seen a recipe using honey.
